Vegan Hot Dogs made with Carrots
Last year my mom got me this awesome book for Christmas with a unique recipe for vegan hot dogs. Thug Kitchen Party Grub is not only full of colorful adult language but it is also full phenomenal vegan recipes. They’re so creative that they used carrots as a vegan alternative to hot dogs.
It was love at first site and then at first bite! I mean seriously, I love the idea of using carrots as hot dogs but how do you get them to taste like a hot dog? Marinade- that’s how!
Thug Kitchen Party Grub allows their carrots to marinade for an hour and a half and roasts them in the oven for about 20 minutes. Since I like to meal prep on Sundays, I adapted their recipe and started prepping the carrot dogs on Sunday to eat throughout the week.
Here’s how I make carrot dogs on Sunday to eat throughout the week...
I cut the carrots into bun sized pieces and cleaned them up by rounding the edges. Then, I boiled the carrots in vegetable broth for 8 minutes. While the carrots cook, I whisk together 1 tbsp of vegetable base, ¼ cup of tamari, ⅓ cup of vinegar, 1 tbsp 313 smoke sauce, 1 tbsp olive oil, 1 tbsp bbq sauce, and 1 tsp of garlic powder, coriander, and mustard seed. Once the carrots are tender enough to stick a fork in, remove them from the broth and toss them in a tupperware container with the marinade.
When you’re ready to eat the carrot dogs, toss a marinated carrot into a skillet over medium heat. Fry the “hot dog” until it is warmed throughout and the outside has slightly crisped. Serve in a bun with your favorite toppings.
I store these carrot dogs in the refrigerator inside the marinade for up to a week. The longer they sit in the marinade, the more flavorful they will be. I like to keep these on hand in the summer for bbq’s, last minute dinners, and weekends at the lake.
