Car Shaped Chickpea Sandwiches with Cucumber & Radish
It’s an exciting time for car lovers in Michigan right now and I’m feeling inspired! The Detroit Auto Show is next week and I’ve been invited for a special sneak preview! How stinking awesome is that?!? Car shaped foods have been on my mind all week and I can’t stop thinking “I’ve got to share this on the blog!”. Ladies and gents, these chickpea cruisers are the perfect way to show your Midwestern auto pride!

Next, assemble your cruisers. Grab your piece of bread and place a generous clump of chickpea mixture on top. Spread it around and add some extra pesto on the bread slice if you desire. Place your wheels on each sand and cover with the other slice of bread.
Ta-da! Chickpea cruisers! I made these tonight for a get together at my place.
This little cutie found an extra use for these wheels. He showed me that they can double as weights!
(per 2 cruisers)
2 pieces of bread- sliced in 1/2
1 Cucumber- sliced
1-2 Radishes - sliced
½ Avocado- smashed
1 tsp garlic powder
1 tsp cracked black pepper
1 tsp salt
1 tbsp prepared pesto
Combine the chickpea mixture. Slice each bread slice in ½ and assemble the wheels. Assemble each cruiser. Enjoy!
