I am a coffee addict! I drink it in the morning, in the afternoon, and even after a large dinner. I’ve been drinking coffee for as long as I can remember. The aroma starts my morning off right. Once I’ve left my bed and can no longer depend on my blankets to keep me warm, I go straight for the coffee pot. My religious every morning coffee drinking started when I was in high school.
Of course, back then my morning cup contained equal parts of coffee, sugar, and milk. Eventually, I switched from milk and sugar to flavored coffee creamer and it was an absolute game changer.
You know the kind of creamer I’m talking about, right? The kind that tricks you into thinking that your morning coffee is a dessert. The kind that makes you feel like getting out of bed should be rewarded with a cup of crème brulee.
Needless to say, I was convinced that creamer was a better alternative to other sweeteners. After all, I wasn’t dumping teaspoons of white table sugar into my cup and I considered that a victory!
Nowadays, I prefer my coffee black, but every now and then I crave a touch of sweet, creamy goodness in my morning mug. Instead of reaching for a creamer full of chemicals, I make my own. It’s simple, vegan, and has only three ingredients; coconut milk, honey, and vanilla extract.
I combine one can of coconut milk with a heaping spoonful of honey and a teaspoon of vanilla extract. Blend the mixture until the honey and milk are emulsified. Voila! You have a healthy and delicious alternative to add to your morning cup of Joe.
This homemade creamer should be stored in a mason jar or glass container in the refrigerator and keeps for 7 - 10 days. The coconut milk can begin to separate after several days. If it does, give the jar a vigorous shake before using in your coffee.
This recipe can be used as a base for a variety of different flavored creamers. Add pumpkin spice mix, nutmeg, and cinnamon to create a cozy cup of warmth during the fall. Make your own Almond Joy flavor by mixing cacao powder, honey, and almond oil with your coconut milk. Enjoy!
Vegan Coffee Creamer
1 can of organic coconut milk
1 teaspoon of vanilla extract
1 tablespoon organic, raw honey
Combine ingredients in a blender until completely emulsified. Store in a glass container for up to 10 days. Shake before use.
Recipe makes 16 servings, approximatley one ounce each.
