Vegan Crunchy Snack

These baked nuggets of love are an ideal snack to whip up for a large crowd and are perfect to munch on during a Saturday afternoon Netflix binge. Tip your head back and enjoy! The best part? They are a snap to make!
This recipe is very scalable. So, use the amount that seems right based on the amount of people eating them. The cup and a half (1can) that I used was enough for 4-6 people. Use dried or canned beans, whatever works for you!
Beans are an absolute pantry staple in my house. I use them in everything from salads to snacks to hearty dinners. They’re versatile, inexpensive, and have a crazy long shelf life!
For a savory version of this recipe, like the one I made, use olive oil. Then, season them with salt, pepper, minced garlic, and berbere.
Berbere is a chili and spice blend mix that is common in Ethiopian cooking. This spicy, earthy blend can be difficult to find in your local supermarket, but should be easy to find at the health food store or online.
Consider a salt and vinegar batch. After the olive oil, spray the chickpeas with vinegar. Bake and sprinkle with dill and sea salt. An extra spritz of vinegar never hurt anyone.
Need to satisfy that sweet tooth? Make a sweet batch to satisfy your cravings, use coconut oil and season with cinnamon and sugar. Yum!

They are a fantastic, homemade alternative to the processed snacks. However, I wouldn’t suggest making these too far in advance - they can get soggy if they are stored for too long.
Crispy Baked Chickpeas
1 can of chickpeas, rinsed and drained or 1.5 cups of dried chickpeas, prepared
Drizzle of high quality oil
Seasonings of choice
Option 1: Olive oil, garlic, salt, pepper, berbere.
Option 2: Coconut oil, sugar, cinnamon
Option 3: Olive oil, apple cider vinegar, dill, sea salt
Begin by preheating the oven to 400 degrees. In a large bowl, combine the prepared chickpeas, the oil, and the seasoning blend. Toss to coat. Bake for 20 minutes or until crisp. Share with your friends!
