Chocolate Covered Mint Avocado “Nice Cream” Bites
Okay, I’m trying to stay healthy- right? But it’s a billion degrees outside and all I really want is a mint chocolate chip ice cream bar. I keep looking at the 3 ripe avocados sitting on my counter and all I can picture is green ice cream!! Like, what is wrong with me? I want ice cream so bad that I’m imagining turning my avocados into mint ice cream?!?
Yes. That’s exactly what’s happening. After about the 5th time of me imagining my avocados as ice cream I decided that I wasn’t crazy at all. In fact, I was a genius. Yes- healthy avocado ice cream.
Green, minty, creamy- avocado ice cream.
So to start, I blend 3 ripe avocados, 2 tsp of mint extract, 3 tsp of vanilla extract and 3 tbsp of raw honey. While searching for my bag of chocolate chips, I found my green alchemy protein powder and decided to toss in a tsp. I figure this way I can refer to them as “protein bites” when I convince my friends to try them.
Once your avocado ice cream is ready, spoon it into your favorite candy or ice cube mold. Freeze the ice cream bites for at least an hour before dunking them into chocolate.
Create a double boiler by using two sauce pans. Melt ½ cup of chocolate chips with 1 tsp of coconut oil. Remove the liquid chocolate from heat and use a slotted spoon to dunk in your avocado bites. Lay the chocolate covered avocado ice cream bites on parchment paper and toss them back in the freezer to harden.
Store these avocado mint bites in an airtight container on parchment paper for up to a month.
Frozen Avocado Mint Bites
3tbsp raw honey
2 tsp mint
3 tsp vanilla
1 tsp green alchemy protein powder
½ cup dark chocolate chips
1 tsp coconut oil
Blend the filling and spoon into ice cube molds to freeze for one hour. Create a double boiler and melt a ½ cup of chocolate chips with 1 tsp of coconut oil and dunk each bite into chocolate. Freeze again to harden. Store your mint avocado bites for up to one month in the freezer.
